Easter picnic

In the end, we wanted to do something special to mark the day.

Bingo, I had planned to bake a carrot cake and the weather was OK for a lunch trip to the field! We found a little space in the community garden with wooden bank and table, and really enjoyed the picnic food with a warm sun and a chilly wind surprising us froö time to time.

First picnic of the year! Now look at this special Easter food I came up with:

Beetroot carpaccio

Seriously. Beetroot is so amazing.

Cut very thinly...

... and coated with dark chocolate! I promise, it's awsome. My friend was surprised but adored it.

Easter nests

Alfala, boiled egg, sprouted buckwheat, nori, and an improvised zingy sauce :

dressing: 1tsp sunflower seed puree, 1/2 lemon juice, 1 tsp mustard, dash of water, salt, pepper, cumin

Carrot & parsnip cake

With carrots, parsnip, dates, nuts, seed butter, eggs, almond flour and spices.

Didn't have coconut, so made an easy chocolate coating. Perfect.

Fluffy texture, not too sweet. Just how we love it!

Only things I didn't make is my friend's fav hummus and organic linseed crackers.

Always nice to taste a bit of everything, honestly I couldn't eat the second piece of cake, everything is so nutritious!
